1 1/2 Cup cold water
2 eggs beaten
1 Cup all purpose flour
1/2 Cup yellow corn meal
Pinch of salt (optional)
In a medium bowl whisk together all ingredients. Let set for half an hour in fridge. To prepare, heat non-stick skillet over medium heat and spray pan with vegetable oil. Pour 1/2 cup tortilla mix into pan, swirl to coat bottom of pan. Cook until lightly brown, flip over and cook until lightly brown on both sides. Keep warm on a plate in oven.
Makes approximately 8-10 corn tortilla shells.
*Warning: Once you have these, you may have a difficult time buying store bought tortilla shells ever again. :)
