Tonight's dinner was something I have not made in a while. This chicken is marinaded in a soy ginger BBQ glaze. Simple, yet delicious. The glazed chicken was served on a bed of oven roasted yams, caramelized onions and mushrooms delicately tossed with baby spinach. I finished the dish with a drizzle of basil oil.
